- 7 oz dark chocolate
- 3/4 cup sugar
- 7 tbsp butter
- 2 eggs
- 1/3 cup flour
- 3.5 tbsp coffee
- 1 pinch salt

Let’s start preparing the tenerina cake, first melt the dark chocolate in a double boiler and make the coffee using a moka pot.
Break the eggs, keeping the yolks separate from the whites. Use 75 grams of sugar to beat the yolks until you obtain a very light and frothy mixture.
Pour the melted chocolate into the yolk and sugar mixture, mix well and add the coffee. Now beat the egg whites with the remaining sugar until they become white and frothy.
Now, fold the whipped egg whites into the egg and chocolate mixture.
Now, sift the flour into the mixture and gently combine.
Line a 9.4-inch pan with parchment paper and pour the mixture into it.
Bake in a preheated oven at 356°F for 25 minutes.
Once baked, let the coffee tenerina cake cool down, then remove it from the pan and dust it with powdered sugar.
