Sushi Rice – How to Cook It, sushi is an ancient and traditional dish of Japanese cuisine.

The first step in making sushi is preparing the rice, which is a starchy rice with a short grain, called kome rice.

Sushi rice is easily found in ethnic and specialty stores, but also in more well-stocked supermarkets. It has small, round grains and, when cooked following the instructions, remains well compact.

Once cooked, the rice should be seasoned with sushizu, a condiment made of rice vinegar, sugar, and salt, which gives the rice flavor and makes it just the right amount of “sticky.”

Once the rice and sushizu are ready, we simply need to pour the rice into a large wooden bowl that’s been moistened or (as I did) onto a wooden cutting board.

Now we just need to sprinkle the rice with the vinegar seasoning and mix it with a spatula, trying not to crush it and also cooling it as quickly as possible, using a piece of cardboard.

When the rice is well cooled, cover it with a damp cloth until it’s time to use it.

Ingredients

LET’S SEE WHAT WE NEED TO PREPARE

  • 2 1/2 cups sushi rice
  • 2 1/8 cups water
  • 1/3 cup rice vinegar
  • 2 teaspoons sugar
  • 2 teaspoons salt

Steps

Let’s start preparing the

  • To prepare sushi rice, the first thing to do is wash the rice to remove impurities. Then pour it into a bowl with cold water and replace the water until it becomes clear.

    Then pour the rice into a large pot with water and turn on medium heat, cooking for about 5 minutes with the lid. Lower the heat to the minimum and let it cook for another 12 minutes or so.

  • After the cooking time, turn off the heat and, without removing the lid, let the rice rest for another 10 minutes.

    Meanwhile, let’s prepare the sushizu

    Pour into a small pot the rice vinegar, sugar, and salt, and dissolve all the ingredients over very low heat, it must not boil.

    Once the sushizu is ready, sprinkle the rice with the vinegar seasoning and mix with a spatula, without crushing it and trying to cool it as quickly as possible, using a piece of cardboard.

    When the rice is well cooled, cover it with a damp cloth until it’s time to use it to prepare sushi!
