Steps for preparing pizzaiola style potatoes cooked in a pan
Coarsely chop half an onion. Sauté it in a pan with a drizzle of oil and a bit of water. Meanwhile, peel the potatoes and slice them after washing.
In the pan with the onion, add a base of tomato sauce and season with basil (or oregano). Cover with sliced potatoes in a single layer. Add salt. Continue with layers of tomato sauce, basil, and potatoes until the ingredients are used up. Finish with tomato sauce and a drizzle of oil. Cover with a lid and cook on low heat for 30 minutes, ensuring the potatoes do not stick to the pan.
When the potatoes are tender, enrich with slices of mozzarella (I used pizza mozzarella which releases less liquid). Cover with the lid and continue cooking until the cheese is stringy. Bring to the table with fresh basil.
Storage
Store the potatoes in the fridge for one day.
