Ingredients for Savory Pie with Artichokes, Scamorza, and Cooked Ham
- 1 roll puff pastry
- 4 artichokes
- 1.76 oz cooked ham
- 5.29 oz scamorza cheese
- 1 bunch parsley
- 8 leaves basil
- 1 tbsp dried parsley
- 1 clove garlic
- 1 glass white wine
- 3 tbsps extra virgin olive oil
- 3 pinches salt
- 1 lemon juice
Preparation of Savory Pie with Artichokes, Scamorza, and Cooked Ham
Clean the artichokes, removing the stem and the tougher outer leaves. Then cut off the tips and remove the choke.
Then, place them upside down in a bowl with water acidulated with the juice of a lemon. Leave them immersed for about 30 minutes. Drain the artichokes and pat them dry with paper towels.
Now cut them into wedges. In a pan, brown a clove of garlic with three tablespoons of extra virgin olive oil. Add the artichokes and cook over high heat for a few minutes. Add salt and deglaze with white wine.
Lower the heat and add the chopped parsley and basil. Mix well and pour in a little water. Continue cooking for another 10 minutes. Then turn off the heat and let cool.
Roll out the rectangle of puff pastry on a baking sheet, covered with parchment paper. Cut a strip 0.4 inches wide from both long sides of the base (these will be for decoration).
