Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 cup shelled broad beans
- 2/3 cup room temperature water
- 1/2 tsp fine salt
- 1/4 tsp granulated sugar
- 1 tbsp aged Pecorino Romano cheese
- 1 tsp instant yeast for savory preparations

Steps
Shell the fresh broad beans and chop them very finely.
In a bowl, pour the sifted flour, add the chopped broad beans, salt, sugar, Pecorino, water (a little at a time), and finally, the instant yeast; mix well with a fork. Do not pour all the water at once because not all flours absorb liquids the same way, and you might need a little less than the amount I’ve indicated; the mixture should be very soft but not liquid, otherwise, we won’t be able to form and fry the fritters.
Pour peanut oil into a deep frying pan and heat it up.
When the oil is hot, using two long-handled teaspoons or a spoon and a teaspoon, scoop a walnut-sized amount of the mixture and carefully drop it into the oil. Fry the yeast-free fritters with broad beans for about 2 minutes, turning them often in the oil with a wooden spoon.
Do not fry too many fritters at once to prevent lowering the oil temperature too much, which would ruin the fry.
When the fritters are golden, drain them and transfer them onto a plate with paper towels. Continue frying until the mixture is used up.
Salt and pepper the fritters with broad beans on the surface and serve them piping hot.
