CREAMY ARTICHOKE PASTA, is a delicious vegetarian main course, ready in just 10 minutes. Very easy to prepare, it is ideal to serve for a quick lunch. To create the creaminess of the dish, I simply blended 3 tablespoons of cooked artichokes with some Parmesan cheese.
The result will be an enveloping and light dish. For this dish, I opted for tagliatelle, but you can use the format you prefer, short or long. penne….But now let’s go to the kitchen and I’ll show you how to prepare the CREAMY ARTICHOKE PASTA

- 3 artichokes
- 12.3 oz pasta
- 1 clove garlic
- 4 tbsps grated Parmesan cheese
- to taste salt
- to taste pepper
- to taste extra virgin olive oil

Let’s start preparing our creamy artichoke pasta: bring plenty of salted water to a boil to cook the pasta.
Clean the artichokes, remove the tougher outer leaves, clean the edges with a knife, and cut the artichokes into thin wedges.As you go, immerse the artichokes in water acidulated with lemon juice to prevent them from browning.
Heat a drizzle of extra virgin olive oil in a pan with a halved clove of garlic.
Add the well-drained artichokes and season with a pinch of salt and pepper.
As soon as the water boils, put the pasta to cook. Once the artichokes are cooked, place half in a blender with the grated Parmesan cheese, and blend everything into a cream. Add two generous tablespoons of cooking water from the pasta to the artichoke sauce.
Once the pasta is cooked, drain it directly into the pan with the artichokes and toss well, then transfer to individual plates and serve.
