Ingredients

  • 10.5 oz zucchini
  • 8.8 oz short pasta (ditalini)
  • 1/2 clove onion
  • 4 tbsps grated parmesan cheese
  • to taste salt
  • 1 pinch pepper
  • to taste extra virgin olive oil

  • 1 Wooden Spoon
  • 1 Kitchen Scale

Steps

Let’s start preparing the

  • Let’s start preparing pasta and zucchini, wash the zucchini, and trim them

    Cut lengthwise to obtain regular strips and then dice them into cubes of approximately the same size.

    Pour a drizzle of extra virgin olive oil into a large pan and sauté the onion for a few moments.

    Add the zucchini and cook everything for 5 minutes.

  • Take 4 tablespoons of zucchini and blend them, keep the zucchini puree aside.

    Add 2 glasses of hot water and salt.

    Add the pasta and cook over low heat for the cooking time indicated on the package, stirring occasionally and adding more water as it gets absorbed.

    A few minutes before the end of cooking, add the zucchini cream and grated parmesan cheese and mix well.
