What are ice pops? They are small desserts that are frozen finger foods made with ricotta, without eggs and without baking, very quick to prepare, decorative and very tasty. Ice pops can be prepared for a special occasion, as an after-meal treat, or to use leftover ricotta from other preparations. Using gluten-free ingredients, the ice pops can become a treat suitable for celiacs.

Ingredients

  • 7 oz sheep ricotta (or cow ricotta)
  • 2 tbsps powdered sugar (also gluten-free)
  • 1 orange
  • to taste dark chocolate chips (also gluten-free)
  • to taste colored sprinkles (also gluten-free)

Steps

Wash the orange thoroughly, then finely grate the peel.

Prepare two small bowls. In a larger one, place the ricotta, add the powdered sugar, the grated orange peel, and a level tablespoon of dark chocolate chips.

Mix well and form balls of about 10-12 grams (0.35-0.42 oz) each, using two spoons or long-handled teaspoons.

In another small bowl, pour the colored sprinkles. Roll the sweet ricotta balls in the sprinkles, place them on a serving plate, and close them in a container or cake carrier.

Place the ricotta balls in the freezer for 50-60 minutes maximum before serving. This way, they will reach that frozen consistency that is not too hard and not too soft.

The ricotta ice pops can be made well in advance, but I recommend placing them in the freezer only an hour before serving, to avoid having a dessert too hard to enjoy. In the meantime, they should, of course, be kept in the coldest part of the fridge.
