Ingredients

  • 4 cups all-purpose flour
  • 0.25 oz fresh yeast
  • 1 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1.25 cups tomato puree
  • 3.5 oz pizza mozzarella
  • 1 leek

Steps

Let’s start preparing the

  • Let’s start preparing the red pizza in a pan. To prepare the pizza dough, I chose to use a stand mixer, but you can follow the same procedures using a bowl.

    First, put the flour, yeast, and sugar into the bowl of a stand mixer with a hook attachment, and start the machine at medium speed.

    Pour the oil and tomato puree slowly and wait for the dough to hook, meaning it coils around the hook detaching completely from the sides of the bowl.

  • Once the mixture is compact, pour it onto an oiled work surface, knead it vigorously, cover it, and let it rise.

    After the rising time, take a pan, grease it generously with olive oil, spreading it with your hands. Pour the dough and, with hands still greased with oil, spread it to cover the entire pan.

    Spread the sliced leek and a drizzle of extra virgin olive oil over the surface.

    Preheat the oven to 482°F static, and once it’s hot, bake the pizza on the lowest rack of the oven.

    Cook for 15 minutes, then add the diced mozzarella, move the pizza to the middle rack, and continue baking for about 5 more minutes until the mozzarella is fully melted.

    Our red pizza in a pan is ready! High, soft, and with melting mozzarella. All that’s left is to cut and taste it immediately.
