Once the fruit has been peeled and diced, blend the pulp in a mixer with granulated sugar, then incorporate the dark chocolate previously melted in the microwave or in a double boiler.

Ingredients
- 1 3/4 cups avocado (ripe pulp)
- 3 1/2 oz 75% dark chocolate
- 1 1/4 oz granulated sugar
- pistachio crumbs
- hazelnut crumbs
- grated coconut (râpé)
- unsweetened cocoa powder

Steps
Remove the avocado skin and dice the pulp to obtain the net weight indicated in the recipe. Place it in the mixer and blend until smooth and homogeneous. Add the granulated sugar and blend again.
Chop the chocolate and melt it in a double boiler or microwave until completely melted. Add the melted chocolate to the blended avocado and quickly blend to incorporate. Transfer the ganache to a bowl and refrigerate to cool (it should not become completely solid, or it will be difficult to work with).
Take the mixture, divide it into equal parts (about 1/2 oz each), and form balls with your hands. Place them on a tray lined with parchment paper. Put the pistachio crumb coating in a plate and roll each truffle in it until completely covered. The Chocolate Truffles are ready to be served.
NOTES
The avocados must be very ripe.
To make this recipe 100% VEGAN, ensure the dark chocolate contains no milk.
If you want to add a touch of extra flavor, you can flavor the ganache with a liqueur of your choice.
Once the Chocolate Truffles are made, you can optionally: dip them in melted chocolate (dark, milk, or white); roll them in unsweetened cocoa powder; roll them in your chosen coating (pistachio crumbs, hazelnut crumbs, grated coconut).
You can use this basic recipe to prepare Spoon Desserts to serve at the end of a meal. In this case, use dark chocolate with a lower cocoa percentage (55%) to make it less thick and obtain a softer, velvety texture. Serve in single-portion glasses and decorate as desired.
STORAGE
The Chocolate Truffles can be stored in the fridge in an airtight container for up to 1 week. I recommend removing them from the fridge 2 hours before serving.
