What could be better than a genuine and light dish, like mixed salad with walnuts?
A tasty proposal, rich in seasonal vegetables and with a pleasant crunchy note: Romaine lettuce, radicchio, arugula, carrots, and fennel form the base of this colorful and healthy dish; the addition of walnuts adds a surprising touch with their crunchy texture.
This mixed salad with walnuts is very easy to prepare and can be customized with your favorite ingredients. You can add cheese, like feta or pecorino, for an even more intense taste. You can dress it simply with extra virgin olive oil or, as I did, make an emulsion with oil and balsamic vinegar.
On one hand, the vegetables with their essential nutrients, on the other hand, the walnuts rich in healthy fats and proteins: a perfect mix for a nutritious and tasty meal.
