Ingredients
- 1 roll puff pastry (round)
- 3 Golden Delicious apples
- 1/2 lemon juice
- as needed brown sugar (for dusting cake)
- 2 eggs (whole)
- 1 tbsp granulated sugar
- 2/3 cup liquid cream
- 1/3 cup whole milk
- 1 tbsp cornstarch
- vanillin (1 packet)
- as needed powdered sugar
Tools
- 1 Bowl
- 1 Springform pan
First, peel the apples, remove the core, and slice them not too thin (about 1/8 inch), drizzle with lemon juice to prevent browning. Unroll the puff pastry and place it in a springform pan with a diameter of 8.7 inches. Prick the bottom with a fork. Arrange the apples inside the pastry, slightly overlapping them.
In a bowl, pour the egg and sugar and beat with a fork. Then add the cornstarch and mix until combined. Pour in the cream, milk, a pinch of salt, and vanillin, and mix again until you have a smooth batter.
Pour the batter you just prepared directly over the apples. Sprinkle with brown sugar. Bake in a preheated static oven at 356°F for about 35-40 minutes. The pastry should be puffed and slightly golden. Remove from the oven, let it cool, and dust with powdered sugar before serving.
NOTES
Use a springform pan with a diameter of 8.7-9 inches to more easily remove the cake once baked.
For the base, you can use ready-made puff pastry found in the refrigerated section of the supermarket, or you can substitute it with shortcrust or rough puff pastry.
In the recipe, I used Golden Delicious apples characterized by sweet and aromatic flesh. You can also use Pink Lady apples with a more tart aftertaste or another variety you prefer.
STORAGE
The APPLE PIE with PUFF PASTRY can be kept at room temperature in a cake holder or under a glass dome for up to 2 days.
