Once the fruit is peeled and the pulp diced, simply blend it in a mixer along with granulated sugar, then incorporate the dark chocolate previously melted in the microwave or bain-marie.

Ingredients

  • 1 cup avocado (pulp)
  • 3.5 oz 75% dark chocolate
  • 2 tbsp granulated sugar

Steps

  • Remove the avocado skin and dice the pulp until you get the net weight indicated in the recipe. Put it in the mixer and blend until smooth and homogeneous. Add the granulated sugar and blend again.

  • Chop the chocolate and melt it in a bain-marie, or in the microwave, until completely melted. Add the melted chocolate to the blended avocado and quickly blend to incorporate. Remove the MOUSSE from the mixer and gently fold from top to bottom with a spatula.

  • Portion into glasses or cups and let it rest in the fridge for a few minutes to set. The Avocado and Chocolate Cream is ready to be served! If desired, sprinkle with pistachio granules.

NOTES

The avocados must be very ripe.

To ensure this recipe is 100% VEGAN, make sure the dark chocolate contains no milk.

For a thicker cream, use dark chocolate with a slightly higher cocoa percentage (over 75%), this will thicken it more.

STORAGE

This MOUSSE keeps in the fridge in a jar with a lid, or in an airtight container, for up to 3 days.
