How to Cook Pork Roast in a Pan: Steps
Make small cuts in the pork roast using a fine-tipped knife, and insert small pieces of butter into each one. Then massage the meat all over with a little more butter.
In a pan, heat the olive oil with a tablespoon of butter. Then, brown a mixture of vegetables made with carrots, celery, shallot, and basil.
Add the roast and rosemary. Brown on all sides, cooking covered on moderate heat. Turn it occasionally with a spatula to ensure even browning.
Now, deglaze with red wine and continue cooking on moderate heat, adding a ladle of hot broth at a time and continuing to turn the meat.
