Ingredients for Broccoli Salad with Lemon

  • 1.1 lbs broccoli
  • 1/2 lemon juice
  • 2 tbsps extra virgin olive oil
  • 2 pinches salt

Preparation of Broccoli Salad with Lemon

  • Cut the broccoli into florets (save the stem for other preparations, like a cream). Wash them under a stream of fresh running water.

    Fill a pot with two fingers of water and place the steamer basket over it. Be careful to keep the water below the level of the vegetables.

    Add the broccoli, without overlapping them, and cover with a lid. Cook over moderate heat for about 8 minutes, starting from when the water begins to boil.

    To check if the broccoli is cooked, test the stem with a fork. They should be firm and not mushy.

  • Once cooked, transfer the steamed broccoli to a serving dish and season with salt, oil, and the juice of half a lemon. You can also make an emulsion by lightly whisking oil, salt, and lemon, then pour it over the vegetables.

Storage of Steamed Broccoli

If you have leftover steamed broccoli, store them without seasoning in the fridge, in an airtight container, for 2 days.
