The seitan with mushrooms is an easy-to-make vegan second course, simple and tasty. Delicious strips of seitan, the wheat-based meat substitute rich in protein, are sautéed in a pan with onion and mushrooms, in this case, I chose champignons, but you can use whatever you prefer. Enjoy it as is or with mashed potatoes or polenta.

- 2.65 oz seitan
- 1 golden onion
- to taste parsley
- to taste extra virgin olive oil

Steps
To prepare the seitan with mushrooms…
First, take the onion, peel it, slice it not too thinly, and fry it in a pan with the extra virgin olive oil over low heat, stirring with a wooden spoon.
While the onion is cooking, clean the mushrooms. Remove the end of the stem with the knife and clean them by wiping with a damp dish towel to remove any dirt, then slice them.
When the onion is soft, add the sliced mushrooms, cover with a lid, and cook for about 10 minutes until they are soft. Add a little water if necessary.
Meanwhile, slice the seitan. Remove the lid, add the seitan to the pan with the onion and mushrooms, and let the water from the mushrooms’ cooking evaporate.
Finally, add salt, pepper, and some freshly chopped parsley. Serve the dish hot.
