Seitan with Mushrooms

The seitan with mushrooms is an easy-to-make vegan second course, simple and tasty. Delicious strips of seitan, the wheat-based meat substitute rich in protein, are sautéed in a pan with onion and mushrooms, in this case, I chose champignons, but you can use whatever you prefer. Enjoy it as is or with mashed potatoes or polenta.

Ingredients

  • 7 oz champignon mushrooms
  • 2.65 oz seitan
  • 1 golden onion
  • to taste parsley
  • to taste extra virgin olive oil
  • to taste fine salt
  • to taste black pepper

Steps

To prepare the seitan with mushrooms…

  • First, take the onion, peel it, slice it not too thinly, and fry it in a pan with the extra virgin olive oil over low heat, stirring with a wooden spoon.

  • While the onion is cooking, clean the mushrooms. Remove the end of the stem with the knife and clean them by wiping with a damp dish towel to remove any dirt, then slice them.

  • When the onion is soft, add the sliced mushrooms, cover with a lid, and cook for about 10 minutes until they are soft. Add a little water if necessary.

  • Meanwhile, slice the seitan. Remove the lid, add the seitan to the pan with the onion and mushrooms, and let the water from the mushrooms’ cooking evaporate.

  • Finally, add salt, pepper, and some freshly chopped parsley. Serve the dish hot.
