Ingredients

  • 14.1 oz potato gnocchi
  • 1/2 yellow onion
  • 2.5 oz pork cheek (in strips)
  • 4 tbsps grated Parmesan
  • to taste salt
  • 1 pinch pepper
  • to taste extra virgin olive oil

Steps

Let’s start preparing

  • Let’s start preparing the gnocchi with pumpkin cream: peel the onion, chop it finely, and sauté it in a pan with a drizzle of oil for about ten minutes, stirring often.

    Remove the skin from the pumpkin and cut it into cubes, add it to the onion with three tablespoons of water. Salt, pepper, and bring to a boil.

    Pour the cooked pumpkin into the immersion blender cup, add the grated Parmesan, and blend it until it becomes creamy.

  • Pour the cream into the pan where you cooked the pumpkin.

    In a separate small pan, sauté the pork cheek until crispy, set aside. Cook the gnocchi in plenty of salted water, drain them as soon as they rise to the surface, and pour them into the pan with the pumpkin cream, adding a few tablespoons of cooking water. Add the pork cheek and toss them over medium heat for a few seconds.

    The gnocchi with pumpkin cream and pork cheek are ready, plate them, and serve immediately.
