Ingredients for Grilled Zucchini Rolls with Cheese and Cherry Tomatoes

  • 3 zucchinis
  • 4.23 oz spreadable fresh cheese
  • 1 bunch parsley
  • 1 tbsp thyme
  • 10 cherry tomatoes
  • 2 pinches salt
  • 1 pinch pepper
  • 1 tbsp extra virgin olive oil

Preparation of Grilled Zucchini Rolls with Cheese and Cherry Tomatoes

  • Clean and wash the zucchinis. Dry them, trim, and slice them lengthwise. Cook them on a hot grill, turning them often. When they are ready, transfer them to a platter, lightly salt them, and let them cool.

  • In a bowl, place the creamy cheese and work it a little with a spoon to soften it. Then, mix it with the chopped parsley and thyme, adding a pinch of pepper.

  • Spread the mixture on the zucchini slices and place the cherry tomato slices on top, previously seasoned with a pinch of salt. Roll them up and arrange them on a baking sheet, lined with wax paper.

  • Drizzle them with a bit of oil and put them in the oven at 350°F for 5-6 minutes.

    Serve the grilled zucchini rolls on a serving platter, sprinkling with more chopped thyme.

  • You can also serve the grilled zucchini rolls cold, without putting them in the oven.
