Fragrant and very aromatic, the apple and jam cookies will win you over at the first bite with their delicious flavor.
They are enticing shortbread cookies with a tasty filling of apple flavored with cinnamon and lemon, and sweetened with honey and cane sugar. All enriched with the addition of jam: I preferred strawberry jam, but you can replace it with cherry or apricot jam.
For the base I used a disk of pre-rolled shortcrust pastry (a great alternative to homemade shortcrust pastry) and, in just a few steps, you’ll prepare a rich and delicious treat.

Ingredients for Apple and Jam Cookies
- 1 roll shortcrust pastry
- 2 apple
- 12 teaspoons strawberry jam
- 1/2 lemon juice
- 2 tablespoons cane sugar
- 2 teaspoons honey
- 1 tablespoon ground cinnamon
- 1 egg yolk
- to taste powdered sugar
Preparation of Apple and Jam Cookies
Peel the apples, cut them into wedges, and then into cubes.
Place the apples in a saucepan and add the juice of half a lemon, the cane sugar, cinnamon, and honey. Mix the ingredients well and cook over medium heat until the apples have absorbed all their water.
Remove the cooked apples from the heat and let them cool.
Roll out the shortcrust pastry on the work surface and use a cookie cutter (2.5-3 inches in diameter) to cut out 12 disks.
Spread a teaspoon of strawberry jam on each disk, leaving the edges free. Then add a tablespoon of apples.
Fold the pastry disks to form half-moons. Press the edges well with your fingertips and finish the edges with the tines of a fork.
Now, place the cookies on a baking sheet lined with parchment paper, and brush with the egg yolk.
Bake in a preheated oven at 400°F for 20-25 minutes. Then, take the treats out of the oven and let them cool on a rack.
Finally, place the cookies on a tray and dust with powdered sugar.
Storage of Apple and Jam Cookies
You can store the apple and jam cookies in an airtight container for 3-4 days.
