Pizza Bundles with Escarole

Pizza bundles with escarole are delicious and flavorful pockets of leavened dough. Serve them as a main dish for lunch or dinner, or in mini version for a tasty appetizer; they are very easy to prepare.

You just need a pre-rolled pizza dough, escarole, olives, and capers, and you’re set! In no time, you’ll prepare irresistible bundles that will make your mouth water just by looking at them.

I didn’t use mozzarella in this recipe, but you can add it if you like.

Ingredients for Pizza Bundles with Escarole

  • 1 package white pizza (ready base)
  • 2 heads smooth escarole
  • 20 Taggiasca olives (pitted)
  • 1 tbsp capers
  • 1 clove garlic
  • 3 tbsp extra virgin olive oil
  • to taste salt

Preparation of Pizza Bundles with Escarole

  • Clean the heads of escarole, removing the tougher outer leaves and earthy stem. Rinse the leaves under cold water and place them in a pot with a little water and a pinch of salt.

  • Bring the pot to the heat and cook until the leaves are tender. Drain and squeeze well.

  • In a skillet, brown the garlic clove with the extra virgin olive oil. Add the chopped escarole and salt. Then, let it soak for a couple of minutes.

    Now add the pitted olives and capers; cook over moderate heat for about ten minutes. Finally, remove the skillet from the heat and let the escarole cool slightly.

  • Roll out the pizza base and cut into six squares.

    Distribute a generous tablespoon of stuffed escarole on each square and close them, forming triangles. Press the edges well with your fingers, fold them upwards and finish with the prongs of a fork.

  • Place the pizza bundles on a baking tray lined with parchment paper and brush the surface with a little oil.

    Bake in a preheated oven at 400°F for 15-20 minutes.

Tips for Pizza Bundles with Escarole.

1) You can add mozzarella or provola to the filling to make it even richer and stringy.

2) If you like, you can add some anchovies in oil (two or three). In this case, crumble the anchovies before cooking the escarole and proceed as in the recipe.
