For a genuine and tasty first course, prepare pasta beans tuna and tomato.
A very simple dish that goes straight to the heart with its authentic taste and enveloping aroma. The creaminess of the beans blends perfectly with the strong flavor of tuna and the sweetness of tomato; all embraced by the al dente texture of the pasta. And every bite is a feast for the palate!
This is a recipe to make on the fly and with few ingredients, the ones we usually have in the pantry: borlotti beans, tuna, peeled tomatoes, and a nice sprinkle of fresh parsley. You’ll have a stunning sauce to dress your pasta, whichever you prefer (both long and short shapes. I chose orecchiette).

Ingredients for Pasta Beans Tuna and Tomato
- 17 oz canned borlotti beans
- 10.5 oz tuna in oil
- 3.5 oz peeled tomatoes
- 1 clove garlic
- 1 bunch parsley
- 2 tbsps extra virgin olive oil
- to taste salt
- 12.7 oz pasta
Preparation of Pasta Beans Tuna and Tomato
In a pan, brown the garlic clove with the extra virgin olive oil. Then, add the peeled tomatoes and two pinches of salt. Cook over moderate heat until the tomatoes crumble.
Next, add the borlotti beans (drained from the preservation liquid). Lightly salt and cook for 5 minutes.
Now, add the drained and coarsely chopped tuna. Mix the ingredients well and sprinkle with part of the fresh chopped parsley. Continue cooking for another 5 minutes.
Meanwhile, cook the pasta al dente in a pot with plenty of boiling salted water.
Before draining the pasta, pour a couple of ladles of cooking water into the sauce to make it creamier.
When the pasta is ready, add it directly to the pan with the sauce and let it flavor for 2 minutes over high heat.
Serve the pasta with the remaining parsley and a drizzle of oil.
