The savory pie with radicchio and ham is a rustic, very tasty, and soft preparation, ideal for a dinner, or we can serve it as an appetizer. It’s great as a dinner saver or fridge cleaner. This recipe is, in fact, a tasty and very easy solution for an impromptu dinner or to use up vegetables, cold cuts, and so on. It can be made using what we already have at home. If desired, the radicchio savory pie can also be made in muffin version (about 10/12 medium-sized), very practical and convenient to take with us to work, school, or during leisure time. We can serve the savory pie already cut into wedges, cubes, or accompanied by tantalizing sauces and creams. We can also cut it in half and fill it, just like a dessert.

Ingredients
- 2 1/4 cups all-purpose flour
- 3 tbsps potato starch
- 1 packet instant yeast for savory pies
- 1 tsp fine salt
- 1 pinch sugar
- 3 whole eggs
- 1 tbsp vegetable oil
- 2 cups fresh radicchio, chopped
- 1/3 cup ham or speck (finely chopped)
- 1 1/4 cups melting cheese
- 1 cup milk

Preparation
1) In a large bowl, place the cheese cut into cubes (provola, mozzarella, Emmental), the finely chopped ham, and the roughly chopped radicchio (already washed and drained).
2) Turn on the oven and set it to 340°F
3) Add the sifted flour and potato starch, the yeast, salt, sugar, eggs, milk, oil, and mix until a creamy, lump-free, and perfectly blended mixture is obtained.
4) Pour the mixture into a pan already lined with parchment paper and level it with the back of a spoon.
5) Bake the radicchio savory pie on the middle rack in the preheated oven and let it cook for about 45 minutes. Check the cooking by inserting a long skewer into the pie, which should come out perfectly dry. Otherwise, extend the cooking for a few more minutes, still checking the cooking.
If we decide to prepare this delicious pie in single-portion version, i.e., muffins, the cooking will be much quicker, about 20/25 minutes at most.
Turn off the oven, take out the savory pie, and let it cool before cutting and enjoying it.
