- 1 cup canned lentils
- 1/4 cup breadcrumbs
- 1 tsp extra virgin olive oil
- 1 clove garlic
- 1 cup tomato puree
- to taste chopped parsley
- to taste extra virgin olive oil
- to taste salt
- 1 egg

Let’s start preparing
To prepare the lentil meatballs in sauce, start by draining the lentils from the preserving liquid and rinsing them under a stream of running water.
Pour the lentils into a blender and blend them well with the addition of 2 teaspoons of extra virgin olive oil, egg, breadcrumbs, salt, and parsley. We should get a cream.
Form the meatballs with your hands.
Then place the meatballs on a baking sheet covered with parchment paper. Drizzle with a little oil and let them cook at 350°F in the oven for 30 minutes, or in the air fryer at 350°F for 10-15 minutes.
Now let’s prepare the sauce. Pour a little extra virgin olive oil in a pan and saute the clove, add the tomato puree, a pinch of salt, and let it cook for 15 minutes. Now add the lentil meatballs and continue cooking for another 5-6 minutes on low heat.
