Ingredients
For this cake, use a 9 or 10-inch springform pan
- 4 eggs (medium)
- 1 cup sugar
- 1 2/3 cups all-purpose flour
- 1 cup mascarpone cheese
- 4 apples
- 1/2 teaspoon ground cinnamon (if desired or preferred flavoring)
- powdered sugar (for decorating)

Steps
To prepare the apple and mascarpone cake, start by peeling 2 of the 4 apples, removing the core, and cutting them into irregular cubes. Slice the other 2 apples into thin slices, which will be used for decoration on top.
In a separate bowl, pour the whole eggs and sugar.
Add a pinch of salt and beat the mixture with an electric mixer until you obtain a frothy consistency. Incorporate the mascarpone with the mixer on low speed and keep mixing with the beaters until well combined.
At this point, gradually add the sifted flour along with the baking powder, continuing to mix with the beaters. Flavor the mixture by incorporating the cinnamon (if desired). Finally, add the apple cubes and mix well by hand to incorporate them into the batter.
Pour the batter into the 9 or 10-inch pan, spreading it evenly. Arrange the apple slices on top to create an elegant decoration.
The oven must be preheated to 356°F.
The baking time should be about 40 minutes.
To check if it’s done, perform the “toothpick test”, by inserting a toothpick into the cake and checking if it comes out dry, indicating that the cake is cooked.
The apple and mascarpone cake is ideal as a dessert to conclude a meal, but it will surely become one of your family’s favorite cakes for breakfast. It is also perfect for a tasty snack, accompanied by a fruit juice, a hot drink, or anything else you desire. For a flawless presentation, just a light dusting of sifted powdered sugar on the surface will suffice.
