Ingredients
- 10.5 oz Sheep ricotta (or other lactose-free type)
- 3 tablespoons Heaping sugar
- 1 pinch Ground cinnamon
- 1 pinch Nutmeg
- 1 Orange
- 1 pinch Fine salt
- 7 oz Dark chocolate
- 0.85 cups Milk
- 1 tablespoon Liquor
- 10 Dry biscuits (also gluten-free)
Preparation
Sift the ricotta into a bowl to make it even creamier (this step is unnecessary if the ricotta is already very creamy), add the sugar, spices, grated orange peel, and the pinch of salt.
Stir until all ingredients are incorporated; you will obtain a creamy and smooth mixture. Let the cream rest in the fridge, covered with food wrap. If you prefer a sweeter cream, add another level tablespoon of sugar.
Prepare the chocolate. In a saucepan, heat the milk and as soon as it boils, turn off the heat, add the liquor, and the chopped chocolate, stirring until completely melted. Remove the saucepan from the stove, stir occasionally, and let it cool for 5 minutes. The cream will have the ideal consistency as it starts to cool; if it solidifies too much while assembling the cups, simply reheat it in a bain-marie. If you desire it softer, creamier, slightly increase the milk quantities.
Meanwhile, coarsely crumble the biscuits.
