Pasta with TUNA SAUCE

Ingredients
- 11.29 oz pasta
- 7.05 oz tuna in oil
- 3.53 oz ricotta (or spreadable cheese or robiola)
- anchovies in oil (2 fillets)
- capers in salt (1 teaspoon chopped)
- to taste salt
- 1 tablespoon chopped parsley

NOTE
Since the sauce is prepared in a flash, first put a pot with plenty of slightly salted water to boil, and as soon as it starts boiling, add the pasta (follow the cooking times on the package of the shape you have chosen).
Place the drained tuna in a bowl and shred it with a fork, add the ricotta, and mix with a spoon to combine.
Rinse the capers (if they are in salt) and chop them with a knife, do the same with the anchovies. Add both to the tuna and ricotta mixture and mix.
As soon as the pasta is cooked, pour it directly into the bowl with the TUNA SAUCE along with 1 or 2 tablespoons of pasta cooking water (adjust based on the consistency you want, more or less creamy). Plate and sprinkle with fresh chopped parsley: your PASTA WITH TUNA SAUCE is ready to be enjoyed!
TIPS
If you decide to enjoy the Pasta with Tuna Sauce cold, I recommend, after draining the pasta, quickly rinsing it under a stream of cold water to stop the cooking and then seasoning it directly in the bowl.
I prefer the TUNA SAUCE to have a more granulated texture, if you want a smoother texture, use an immersion blender to blend the sauce before seasoning the pasta.
For a lighter preparation, replace tuna in oil with tuna in water, it has a much more neutral taste but is also much less caloric.
Instead of ricotta, even spreadable cheese like Philadelphia or robiola works well.
Add a grind of pepper if you like it.
