- 2 tbsp extra virgin olive oil

HOW TO PREPARE: SALMON AND AVOCADO TARTARE
Remember, if you haven’t bought pre-frozen fish from the fishmonger, to consume it safely, being raw fish, you need to keep it in the freezer for at least 96 hours (4 days) at a temperature of – 0 °F.
First, remove the skin from the salmon and check with your fingertips for any remaining bones. If there are any, remove them with tweezers. Then, cut the salmon into slices about a quarter-inch thick, and finally, cut these into cubes as uniform as possible.
Clean the avocado, remove the skin and pit, then cut the flesh into cubes the same size as the salmon. Combine the Salmon and Avocado in a bowl and season them with an emulsion of extra virgin olive oil, lemon juice, a pinch of salt, and a grind of pepper. Mix and let it marinate for at least 20 minutes.
Distribute the Salmon and Avocado Tartare into individual glasses or use a food ring to arrange the tartare on plates, gently compact it with a spoon, then remove the ring. Perfume with Cyprus Black Salt or chopped chives and serve immediately.
NOTES
If despite the freezing process you don’t feel safe consuming raw fish or you simply don’t like it, you can sear the Salmon in a pan for a few minutes in a tablespoon of oil or use Smoked Salmon: the Salmon and Avocado Tartare will still be delicious.
I recommend preparing the tartare at the last minute to avoid the avocado darkening and ruining the appearance of the dish.
When buying avocado, make sure it is ripe, yielding, and soft to the touch.
STORAGE
The Salmon and Avocado Tartare should be enjoyed as soon as it is prepared and is not suitable for storage. If any remains, place it in the refrigerator, sealed in an airtight container, and use it at most the next day to prepare meatballs or to dress pasta, as long as the Salmon is cooked.
