Zucchini Sandwich easy and quick recipe. Ideal for a light and quick lunch, some time ago you loved the potato sandwich a lot, today I propose a summer variant ideal for a quick lunch. To prepare them you need a few ingredients, precisely: zucchini, cheese, then cooked and stuffed. In my version, I added spreadable cheese and cured ham, but you can get creative by creating new combinations. Ingredients
- 2 zucchini
- to taste salt
- 4 1/4 oz pizza mozzarella (grated)
- 5 1/4 oz cured ham
- 2 3/4 oz fresh cheese
How to Make Zucchini Sandwiches
Wash the zucchini, and slice them thinly with a mandolin (alternatively, you can use an electric slicer). At this point, arrange the slices side by side, slightly overlapping; on a baking sheet lined with parchment paper and lightly oiled.
Season with salt and pepper, then add the grated pizza mozzarella. Bake until golden for about 15 minutes in the preheated oven at 400°F, with the fan mode.
Take them out of the oven and fill with spreadable cheese, ham, and finally fold them in half.

Preservation and Variations of Zucchini Sandwiches
They can be stored in the fridge until the next day, closed in an airtight container. You can also fill them with smoked salmon and avocado, or with pesto and sun-dried tomatoes.
