The savory strudel with cheeses is a complete dish, bursting with flavor — perfect to make for a tasty dinner or to take on a picnic. I admit this strudel was born out of necessity on a day when I had little time to cook and, above all, several leftover pieces of cheese in the fridge that I wanted to use up, so what better occasion than a fridge-emptying savory tart? I must say the result was a success, a true triumph of flavors! Now follow me into the kitchen and I’ll explain all the secrets to prepare the savory strudel with cheeses!

Ingredients for the savory strudel with cheeses
- 1 sheet pâte brisée (shortcrust pastry)
- 7 oz mozzarella (cut into cubes)
- 2 oz gorgonzola
- 4 sun-dried tomatoes
- 3 oz cooked ham (diced or another cured meat)
- 1 egg (for brushing)
Preparation of the savory cheese strudel
As you can read, the preparation of this strudel is really very quick — it’s a “smart” recipe, one of those dinner-savers that come to my rescue whenever I’m late and have little time to put something decent on the table…
The first thing to do will certainly be fun: open the refrigerator and use up all the leftover cheeses and cured meats you have! I very often end up with a large quantity of different cheeses, mozzarella, that have been sitting in the fridge for too long and before the time comes to throw them away (which I can’t bear) I always find a way to recycle them creatively and tastily.
Place all the cheeses cut into cubes in a bowl, break up the mozzarella, and in my case I used diced cooked ham, but any cured meat works well, even cut into strips.
Take some sun-dried tomatoes, chop them into small pieces and mix them with the cheese and cured meat mix — and now the filling for our savory strudel is ready!
Open the shortcrust pastry, place the filling in the center and then fold first one side and then the other, slightly overlapping them and pressing gently so they don’t open during baking.
Seal the edges well, then if you want to create a decorative effect, try cutting the surface of the strudel lightly with the blade of a knife, but if you’re in a hurry simply brush with a lightly beaten egg and bake at 375°F in a conventional oven for about 20 minutes.
Once our savory strudel with cheeses is out of the oven, let it cool for about 10 minutes and then you can finally bring it to the table!
