Ingredients

  • 8 slices bread (white or whole grain sandwich bread)
  • 5.3 oz gorgonzola
  • 3.5 oz cow's milk ricotta
  • 1 Fuji apple (or Pink Lady)
  • 2.8 oz walnuts (shelled + for decoration)

Steps

  • Put the Gorgonzola and ricotta in a bowl and work it with a spatula until creamy.

    Add the coarsely chopped walnuts and mix. Wash the apple thoroughly, cut it into wedges, then into small cubes. Add it to the gorgonzola and walnut mixture.

  • If you prefer a crunchy Sandwich, you can slightly toast the slices of bread in the oven or on a griddle, or you can fill them directly with the Gorgonzola, apple, and walnut cream.

    Spread an abundant layer of filling evenly over each slice of bread, then close the Gorgonzola, Apple and Walnut Club Sandwich with the other slice of bread.

  • Let rest in the fridge for half an hour to let flavors meld.

    When serving, cut the slices of bread in half diagonally. If desired, you can decorate the surface with a dollop of Gorgonzola mousse and a few walnut halves.

BREAD You can use sandwich bread, either white or whole grain, or replace it with crustless pain de mie. It is not mandatory to toast the bread before filling it, although doing so you will appreciate the contrast of the crunchy bread with the soft and creamy filling.

GORGONZOLA In the recipe for the Gorgonzola, Apple and Walnut Club Sandwich I used spicy Gorgonzola, but sweet Gorgonzola is fine too.

RICOTTA Instead of ricotta, you can substitute with cooking cream, which will make the gorgonzola mousse creamier, albeit more caloric. In this case, I recommend mixing it with the Gorgonzola using a hand or electric whisk.

Spread two slices of bread with mayonnaise, place lettuce leaves on top, add sliced tomatoes, sliced mozzarella, and sliced hard-boiled egg, and cover with the other slice of bread.

Spread two slices of bread with mayonnaise, place smoked salmon on one slice, then add lettuce and sliced tomato, and finally add sliced hard-boiled egg. Cover with the other slice of bread and press slightly.

HAM AND CHEESE CLUB SANDWICH
