The strawberry and lemon popsicles are delicious and refreshing, perfect for a snack break in the hottest season: all fruit and little sugar. I didn’t even make the classic syrup usually made for fruit popsicles. I had prepared a kilo of strawberries, we ate some, I made yogurt cups for breakfast, and there were still some left. So I drained them from the juice (I wanted lots of fruit and little water for these popsicles), added a bit of lemon juice, and into the molds went a nice thick and tasty pulp. With these strawberry and lemon popsicles, a healthy and thirst-quenching snack will be ready in no time. Missing popsicle molds? No problem: you can simply use paper cups, but I recommend getting those molds because if you love homemade popsicles or ice creams, you’ll use them a lot.

Wash the strawberries, remove the stems, and cut them into pieces. Add the sugar, water, and mix. Cover the bowl and place it in the refrigerator for a couple of hours. You can also prepare it the night before and keep it in the refrigerator overnight so that the strawberries are well flavored. After the resting time, transfer the strawberries into a strainer placed over a bowl and let them drain. They do not need to be perfectly drained but should lose a good part of the juice they are soaked in. Gather the strawberries in the blender, add a tablespoon of lemon juice, and blend well to obtain a nice thick pulp. If necessary, you can also add one or two tablespoons of the strawberry juice to allow the blender blade to move more easily. Pour the mixture into the molds and place them in the freezer for six hours before consuming.
