Ingredients for Preparing Zucchini Skewers

  • 2 zucchini
  • 5.3 oz speck
  • 5.3 oz scamorza cheese
  • 2 eggs
  • as needed breadcrumbs
  • as needed extra virgin olive oil
  • as needed fine salt

Steps for Preparing Zucchini Skewers

To prepare the delicious zucchini skewers WATCH THE VIDEO RECIPE. Start by washing the zucchini under running water.

Pat them dry with paper towels and slice them with a mandoline, into slices about 2-3 mm thick lengthwise.

Lay each slice on a cutting board and fill each with speck and a slice divided in two of scamorza cheese. Roll them up to form a roll and skewer three onto a skewer.

In a bowl, beat the eggs with salt using a fork. Dip the skewers first in the egg and then in the breadcrumbs. For extra crunchiness, you can repeat the breading.

  • Place the skewers in the air fryer basket with perforated parchment paper or on a baking tray lined with parchment paper. Using an oil sprayer, season them with extra virgin olive oil and cook in the air fryer at 375°F for 10-12 minutes, flipping them halfway through, or in a static oven at 392°F for 20 minutes, flipping them halfway through.

For a Crispier Breading
➤ Use rustic breadcrumbs (like panko or homemade) or do a double coating: egg → breadcrumbs → egg → breadcrumbs.

Light Version:
➤ Use light scamorza or light hard cheese slices.
➤ Replace speck with lean cooked ham or bresaola.

They keep in the fridge, covered with plastic wrap or in an airtight container for two days

Freeze them before cooking, separated on a tray, then transfer to freezer bags. Lasts up to 2 months
