- 9/10 cup sugar
- 1 3/4 cups all-purpose flour
- 1 plain yogurt (4.4 oz)
- 3 1/2 tbsp milk
- 1/3 cup rice oil
- 3/4 cup dried apricots
- 1/2 packet baking powder
- 1 lemon (zest grated)

Steps
Chop the apricots into small pieces. In the mixer bowl or with an electric beater, beat the eggs with the sugar until light and fluffy. Gradually add the rice oil while mixing well. Add the yogurt, milk, grated lemon zest, flour, and sifted baking powder. Also, add the apricots and gently mix. Pour the mixture into a greased and floured 8.7 x 4 inches loaf pan and bake in a preheated oven at 356 °F for 40 minutes.
