Today I made big breakfast cookies. They remind me of grandma’s cookies or the baker’s. Simple, crumbly, and perfect for breakfast.
The recipe is very easy! Follow the photos with the steps and make them too!
If you don’t want to use butter, you can replace it with 1/3 cup of vegetable oil. Also, you can replace sugar with truvia. It’s a natural calorie-free sweetener. You need only one-third of the sugar amount.

- 4 cups all-purpose flour
- 3/4 cup granulated sugar
- 7 tbsps butter
- 3 eggs (medium)
- 1 packet baking powder

An easy and quick recipe for a sweet breakfast!!
Pour into the bowl the flour, sugar, and baking powder, then mix with a fork. Add the softened butter in pieces and the eggs. Knead until you get a smooth and homogeneous dough. To speed things up, you can use a kitchen robot: put all the ingredients, and once mixed, pour on the work surface and knead. This second method helps those who are less experienced in preparing shortcrust pastry.
Shape the dough into a log and cut it into 6 equal parts.
Apply slight pressure to each piece to form 6 smaller logs.
Divide each log into 4 parts.
Pour some water on the baking sheet and cover with parchment paper. Slightly flatten the individual pieces and distribute them on the baking sheet spaced apart.
Use a fork to make lines on the surface. Set the oven to 320°F (fan) and continue preparing the breakfast cookies.
Roll the individual pieces in sugar.
Then position them again on the baking sheet.
Bake in a preheated oven at 320°F for 25 minutes (until golden). Remove and let cool completely.

As promised, the recipe is easy and quick. It passed the children’s test too: they love them even if there’s no trace of chocolate 🙂 ! Next time they told me they will make them… “since it’s easy”. I’m sure they will be delicious!!!
