The choux pastry dough is neutral, so you can fill the zeppole with both sweet and savory ingredients. Today we will see the savory version with salmon.

Ingredients
- 3 oz butter
- 1 tbsp sugar
- 1 cup all-purpose flour
- 3 eggs
- 7 oz smoked salmon
- lettuce
- cream cheese
- black pepper

Steps
In a saucepan, boil a glass of water with sugar (1 tbsp) and butter (3 oz). Once dissolved, remove the pan from the heat and pour in the flour (1 cup) all at once, stirring vigorously with the whisk. Then put the pan back on the heat, stirring vigorously until the dough no longer sticks to the sides of the container. At this point, add the eggs one at a time, mixing well with a wooden spoon.
Preheat the oven to 392°F and prepare the zeppole. Line a baking sheet with parchment paper. Place the dough in a piping bag, form circles of two layers or simply strips about 4 inches long, also with two layers.
Once the oven reaches temperature, bake for about 25 minutes.
After baking, turn off the oven and leave the door slightly open with a wooden spoon to let them cool slowly.
Once cool, cut them in half with a knife and fill them. Put the cream cheese in the piping bag, and with a star tip, spread the cheese over the entire surface. Add slices of smoked salmon and lettuce leaves. Close with the upper part of the zeppole, add a dollop of cheese and salmon in the center. Finish with some black pepper.
If you have a Thermomix, follow these simple steps to prepare the choux pastry dough.
Put 5 fl oz of water in the bowl and 3 oz of butter. Add a pinch of salt and place the basket instead of the measuring cup. 5 min. 212°F Speed 1
Add 1 cup of flour and put the lid on. Mix: 20 sec. Speed 4
Remove the bowl and let it rest for 10 minutes to cool.
Preheat the oven, line the baking sheet with parchment paper, and prepare 3 eggs on the work surface.
Reposition the bowl. Speed 5, add one egg at a time, then operate with the measuring cup for 30 sec. Speed 5.
Transfer the dough to a piping bag and follow the steps described above.
