Today we talk about a simple and quick recipe with eggplants: fried eggplants stuffed with cooked ham and cheese. Eggplants are a vegetable rich in minerals (phosphorus, potassium, and magnesium), vitamins, and fiber. They are often recommended in weight loss diets because they contain few proteins, fats, and carbohydrates; they are rich in water and have a low calorie content.

Let’s get back to the recipe for fried eggplants stuffed with ham and cheese.

Ingredients
- 2 black oval eggplants
- 5.3 oz mozzarella
- 5.3 oz cooked ham
- 3 eggs
- as needed breadcrumbs
- as needed peanut oil
Preparation
Wash the eggplants well and remove the stem. Slice them about half an inch or a little more thick. Lay the slices two by two, trying to position similar sizes, and distribute the cooked ham on the surface.
Slice the mozzarella and cover all the towers. I recommend using pizza mozzarella blocks. They are drier and do not release water during cooking.
At this point, close with the eggplant slice you matched and placed below.
Separately, beat the eggs with a pinch of salt. Pass the stuffed eggplants in the egg, dipping the top and bottom first, and then the lateral circumference.
Proceed with the breadcrumbs coating. Cover the entire surface, then dip the lateral circumference again in the egg, and finish with breadcrumbs.
This way, it seals well and doesn’t leak during cooking.
Meanwhile, heat the oil in a pan. When it is very hot, immerse 3 pieces for a few seconds and then turn them. This way, it closes laterally, and the mozzarella doesn’t leak during cooking. Cook for a couple of minutes on each side.
I recommend frying a few pieces at a time to not lower the oil temperature too much.
Once ready, take them with a tongs and let them dry on frying paper. Then transfer them to a serving plate.
