The holidays are over and you still have panettone to use up? No problem! In the kitchen, nothing goes to waste! Sometimes it just takes giving ingredients a second life, and they’re a pleasure to eat! Did you know you can make delicious truffles with panettone? They’re delicious and really simple to make! Plus, they don’t require baking! Follow me into the kitchen!

Ingredients
- Half Panettone
- 3.2 oz Ricotta
- Whipped cream
- 1 glass Milk (scarce)
- 7 oz Dark chocolate
- as needed Unsweetened cocoa powder
Preparation
Slice the panettone and then break it into small pieces. I used one with raisins and candied fruit, and it turned out very good. If you don’t like those, use one without and add chocolate chips, or use whatever you prefer inside. They will be a pleasant surprise when you eat the truffles!
Transfer the crumbled panettone into a large bowl and add the ricotta. Mix and blend well with the mixture. I recommend doing it by hand, it’s easier and distributes better.
Add a scant glass of milk and proceed as in the previous step. It will be entirely absorbed by the panettone.
Finally, add a bit of whipped cream and mix well. Take part of the mixture and form many balls the size of a walnut. Distribute them on a sheet of parchment paper and let them rest in the refrigerator for an hour.
After the resting time, melt the dark chocolate in a double boiler. For convenience, I recommend putting the melted chocolate in one bowl, the unsweetened cocoa powder in another, and preparing a tray with a sheet of parchment paper. Take a ball, dip it in the dark chocolate, and then in the cocoa powder. You can use a toothpick or simply a spoon and fork to help.
Distribute the truffles on the prepared tray and put them back in the refrigerator to rest. I made them in the evening and thus let them rest overnight in the fridge, but 2 hours are enough.
The panettone truffles are ready! Little delights to offer with a coffee or give as gifts.
This year at Christmas, I bought some tin boxes and put a few with paper cups inside. They looked great and were much appreciated.
