Milk Rolls for Buffets to Fill with Sweet or Savory Stuffings – The Recipe to Make Them at Home

Hello! Today we will see how to prepare at home the milk rolls used for buffets. My kids love them, they are great for snacks so occasionally I ended up buying them. They are really expensive considering they are sold in 500 g bags, so I didn’t always buy them. Then I discovered that it’s quite simple to make them at home, so I occasionally make them myself. It takes a bit of time, but it’s really worth it!

MILK ROLLS FOR BUFFETS – THE RECIPE TO MAKE THEM AT HOME

Ingredients

  • 12 oz all-purpose flour
  • 5 oz Manitoba flour
  • fresh baker's yeast
  • 3 oz sugar
  • 1 1/4 cups milk
  • 3 1/2 tbsp butter
  • 1 pinch salt
  • olive oil
  • 1 egg

Preparation

  • Mix milk with sugar and salt in a large bowl. Crumble the fresh yeast and mix with a fork until it dissolves completely. Soften the butter separately and then pour it into the bowl. Mix well and finally add the sifted flour.

  • Transfer the dough onto a floured work surface and knead until you get a smooth and homogeneous ball. Grease the bowl with olive oil and place the ball to rest. Cover with plastic wrap and let rise in the oven with the light on for about 2 hours or until it doubles in size.

    Next, put the flour on the workbench and form a loaf with the dough. Divide it into two parts cutting along the long side and cover with a clean cloth. From the two loaves, make about 16 balls of 1 oz each.

  • Work the individual balls to shape them. Roll them inside the palm of your hand, then flatten them by bringing the sides to the center (several times), and finally, give them a round shape by rolling them again in the palm of your hand.

    Spread a sheet of parchment paper and place the balls well spaced apart. Separately beat the egg with a pinch of salt and a couple of tablespoons of milk. Brush the balls on the surface and let them rise for another 30 minutes, again in the oven with only the light on.

  • Take the tray out and preheat the oven to 392°F (200°C). When it reaches the temperature, place the tray in the middle rack and bake for about 10 minutes until the rolls are golden on the surface.

  • Let the buffet milk rolls cool at room temperature for a few minutes, and then they are ready to fill!

    It’s a neutral dough, so you can easily fill them with cream or a jam, or with cold cuts and cheese, or make small sandwiches with hamburgers. If you want, the recipe is very simple and fast.. look here “hamburger“.
