Sofia loves apples but does not eat them with the skin.
At school, due to covid_19, kids have to manage on their own a bit, so she found the simplest solution: she doesn’t eat them and brings them home 🤣
Mom then prepares a delicious snack… very quick to make!
It’s irresistible. Prepare it with me!

Preparation
I’ll show you how you can prepare an irresistible apple cake in no time. Prepare all the necessary ingredients and tools on your workbench: a bowl and a whisk. If you want, you can always use a kitchen robot, but it is so simple and quick that I recommend doing it by hand.
Use a large bowl for more freedom of movement. Beat 2 eggs with sugar (1/3 cup) until completely incorporated.
Meanwhile, put a saucepan on low heat to melt the butter, then add to the eggs and continue mixing.
Add the grated zest of half a lemon, making sure not to take the white part.
At this point, gradually add the sifted flour and baking powder, mixing at each step.
Once all the flour is incorporated, add a pinch of salt and mix everything.
Now focus on preparing the apples.
Once the apples are peeled, cut them into slices of the same size. Put them in a bowl and add a few teaspoons of sugar, the grated lemon zest, and its juice. Mix and set aside.
Take a tart pan of 8 inches and once buttered and floured, pour the cake mixture inside and level with a spoon.
Arrange the apples in a radial pattern to cover the entire surface.
Cover with a few teaspoons of sugar and curls of butter.
Bake in a static oven at 350°F for 30 minutes.
After baking, leave the oven door slightly open (hold it with a wooden spoon) for 10 minutes. Then let it cool at room temperature. Finally, decorate with powdered sugar.
