Ingredients

  • 2 cups all-purpose flour
  • 3.5 oz grated Parmesan cheese
  • 2/3 cup butter
  • 4 eggs
  • 2 tbsp fine salt
  • 10.6 oz cooked wheat
  • 1/2 cup milk
  • 12.3 oz sheep ricotta
  • 2 tsp black pepper
  • 5.6 oz salami
  • 5.6 oz pannerone

Steps

SAVORY PASTIERA WITH CHEESE AND SALAMI.

  • It’s a basic recipe to use for savory pies. It’s very easy to make and versatile. You can enrich it with spices, depending on your taste and the pie you want to create.

  • To prepare the savory pastry, pour the flour, Parmesan, butter, eggs, and salt into a food processor with blades.

  • Transfer the dough onto a work surface, form a smooth dough ball and wrap it in plastic wrap. Refrigerate for at least 30 minutes or until ready to use.

  • In a small saucepan, put the milk with cooked wheat and butter and cook for about ten minutes. Then, cover with plastic wrap and set aside.

  • Cut the salami into cubes.

  • Proceed in the same way with the Pannerone from Lodi (alternatively, you can use Taleggio or similar cheeses).

  • Place the sheep ricotta, eggs, pecorino, Parmesan, salt, and pepper in the blender.

  • Blend to mix and combine the ingredients.

  • Add the cooked wheat and blend for a few seconds.

  • … and the cheese. Then, activate the food processor again to mix well.

  • Now that we have all the ingredients ready, we can prepare the pastiera.

    First, preheat the oven to 350°F.

    Take the savory pastry dough ball that has rested in the fridge, remove about 1/3 and set it aside. It will be used later to form the classic strips of the pastiera.

  • Place the dough ball between two sheets of parchment paper and roll it out with a rolling pin to a thickness of about 0.2 inches. Place the sheet in the pan and remove the top sheet. Poke the surface with a fork and smooth the edge with a knife.

  • Pour the filling onto the pastry and distribute it evenly.

  • Take the dough that was set aside and the excess from the edges and knead it again, then roll it out between two sheets of parchment paper to a thickness of about 0.1 inches.

  • Cut 7 strips about 0.6 inches wide and form the classic lattice pattern on the surface of the pastiera.

  • Place the pan on the lower rack of the oven and bake for about 45 minutes at 350°F in static mode or until golden. Once baking is complete, turn off the oven and leave the door slightly open. You can place a wooden spoon to block its closure. Let it rest until it cools down or until you are ready to serve it.
