Cauliflower Rice Salad with Beans

Cauliflower rice salad with Corona beans, a complete main dish where the proteins of the beans combine with the fibers of the cauliflower. Just add a slice of bread for a balanced and delicious lunch or dinner.

For this recipe, I used purple cauliflower, which is a cross between broccoli and common cauliflower. This variety of cauliflower is rich in carotenoids and anthocyanins, which have antioxidant properties.

Ingredients

  • 1 cauliflower
  • 8 oz beans (Corona type, which is a large variety)

  • as needed lemon juice (recommended but optional)

  • 1 Food Processor Veggie Ricer
  • 1 Salad Bowl
  • 1 Rice Cooker

Steps

  • Wash the cauliflower under running water and separate the stalk from the florets.

  • Place the florets in the Veggie Ricer or grate the cauliflower. You can cook the cauliflower in the microwave, steam it, or simply in a pan for a few minutes.

  • Transfer everything to a salad bowl, add the beans, oil, and lemon.

  • Serve warm.
