For this recipe, I used purple cauliflower, which is a cross between broccoli and common cauliflower. This variety of cauliflower is rich in carotenoids and anthocyanins, which have antioxidant properties.

- 8 oz beans (Corona type, which is a large variety)

Steps
Wash the cauliflower under running water and separate the stalk from the florets.
Place the florets in the Veggie Ricer or grate the cauliflower. You can cook the cauliflower in the microwave, steam it, or simply in a pan for a few minutes.
Transfer everything to a salad bowl, add the beans, oil, and lemon.
Serve warm.
