Eggplant Tacos with Vegan Filling

Eggplant Tacos with Vegan Filling: a unique dish ideal for eating more seasonal vegetables and legumes.

To make this dish, I did many trials and have to thank my husband who ate eggplants with various fillings for days 🙂 until I managed to find a combination that satisfied me.

By the way, this filling is also delicious simply on a slice of bread.

So let’s get started and prepare these eggplant tacos with vegan filling together, oh boy, they’re good!
