- 3/4 cup lentils (brown)
- 4 oz tofu (plain)
- 1/2 cup breadcrumbs (or blended oat flakes)
- 1/4 cup walnuts
- 1 clove garlic
- 1/2 tsp rosemary (dried)
- 1/2 tsp oregano (dried)
- 1/3 tsp ground cumin (leveled)
- 1/2 onion
- 2 tbsp extra virgin olive oil
- 2 tbsp soy sauce (low sodium)
- to taste pepper
- to taste chili pepper
- to taste salt
- 15 leaves basil
- 17 oz tomato sauce
- 2.5 oz basil
- to taste salt

Steps: Genoese Lentil Meatballs
Cook the lentils in plenty of salted water, do not over-salt because we’ll be using soy sauce in the mixture; I didn’t even add salt.
Crumble the tofu with your hands in a bowl.
In the mixer, coarsely blend the slightly toasted walnuts, garlic clove, onion, breadcrumbs, all spices, olive oil, soy sauce, cooked and drained lentils, and tofu.
Transfer the mixture to a bowl, add pepper, chili pepper, basil and adjust the salt if needed.
Take a tablespoon from the mixture and form balls. If the mixture is too soft, add some breadcrumbs. Fry or bake the meatballs.
Separately, prepare a simple sauce with tomato sauce and basil, then add the previously cooked meatballs to let them soak up the flavors.
