Genoese Lentil Meatballs

  • 3/4 cup lentils (brown)
  • 4 oz tofu (plain)
  • 1/2 cup breadcrumbs (or blended oat flakes)
  • 1/4 cup walnuts
  • 1 clove garlic
  • 1/2 tsp rosemary (dried)
  • 1/2 tsp oregano (dried)
  • 1/3 tsp ground cumin (leveled)
  • 1/2 onion
  • 2 tbsp extra virgin olive oil
  • 2 tbsp soy sauce (low sodium)
  • to taste pepper
  • to taste chili pepper
  • to taste salt
  • 15 leaves basil
  • 17 oz tomato sauce
  • 2.5 oz basil
  • to taste salt
  • to taste pepper

Steps: Genoese Lentil Meatballs

  • Cook the lentils in plenty of salted water, do not over-salt because we’ll be using soy sauce in the mixture; I didn’t even add salt.
