Ingredients for preparing the parmesan

To prepare this light eggplant parmesan my way, you will need:

  • 1 eggplant
  • 1 buffalo mozzarella
  • 2 tomatoes

Steps for preparing the parmesan

Cut the eggplant into round slices and grill it.
Also, slice the mozzarella and tomatoes, season them with oil and oregano.
Assemble the parmesan: one layer of eggplant, one of tomato, one of mozzarella, and make three layers ending with the eggplant slice.
