Pumpkin Cream: Sunshine in a Dish. It has become my favorite comfort food, and to think I never liked pumpkin. 🙂
But my daughter loves pumpkin, it’s in season, easy to cook, low in calories (26 kcal per 100 g), made up of 90% water, and rich in fiber, so I started experimenting with different recipes. I’ve also learned not to throw away the seeds but to use them as a snack, in salads, or, as in this case, to garnish my cream.

- 1 1/8 lbs delica pumpkin
- 5.6 oz potatoes
- 1/2 onion
- 2 cloves garlic (cooked in air fryer)
- as needed water (enough to cover the chopped vegetables)
- as needed salt
- as needed extra virgin olive oil
- as needed pumpkin seeds (optional)
- as needed bread croutons (optional)

Steps

Cut the pumpkin, remove the seeds and the skin.
Francy’s Tip: Removing the skin from vegetables and fruits with washing eliminates dust and dirt, but not pesticide residues.
Cut a potato into not too large pieces.
Chop and sauté an onion. Tip: If you’re on a diet, make a fake sauté with water instead of oil.
Add the potatoes and pumpkin, let them flavor and then add the water. Cook for about 40 minutes, potatoes and pumpkin should be soft, adjust with salt and add pepper.
Since for another recipe I had cooked a head of garlic in an air fryer, I added it to the pot.
I squeezed the head of garlic cooked in an air fryer, just two cloves to benefit from all the benefits I explain in the FAQs at the end of the recipe.
Finally, blend with the immersion blender until you get a cream.
Garnish with some pumpkin seeds, croutons, and a drizzle of oil.

Why do you recommend peeling fruit or tubers?
In my recipes, I always remove the peel from potatoes, but also the first layer of onions, carrots, pumpkin, etc.
Washing is very important to remove contact pesticides (e.g., copper sulfate), but it is useless for systemic ones, which are the vast majority.Why did you add garlic to the cream?
Garlic is antiseptic and purifying. It also seems to lower blood glucose levels, counteracts high blood pressure and cholesterol, strengthens the immune system, which is why I add it to my dishes.
Can I freeze it?
Absolutely yes.
