Boil the potatoes in a pot of plenty of salted water, let them cool, and mash them with a potato masher or the tines of a fork.
Add the breadcrumbs and Parmesan and mix, adjust the salt.
Add the egg and incorporate it into the mixture.
Finally, add the flour little by little until fully absorbed.
Finish kneading on a floured surface and form a dough, as in the picture.
Divide the dough so that you can use part for the base of the savory pie and part to form the classic strips that will decorate the pie.
I used a 9.5 inch pie pan, greased, and with my hands, I used the dough to prepare the base of the pie, adding a teaspoon of mustard (optional).
And finally, I added the ham, the stracchino, and again the ham; of course, you can use whatever you like best.
Use a third of the dough to make the strips that will be placed over the filling.
Bake at 356°F for 30 minutes or until golden, plus one minute with the grill function to get a nice crust.
