Today, I’m telling you about this “puff pastry” made of legumes that I found in the refrigerated section of my supermarket.

The manufacturer calls this product: fresh base for savory pies, intelligently named because it’s less crispy, flaky, and fatty compared to traditional puff pastry.

What caught my attention were the nutritional values, especially the saturated fat percentage of 0.6 and the 276 kcal calories. In traditional puff pastry, saturated fats are 8.7 and calories 390 kcal.

In light of this, I put it in the cart and prepared a classic spinach and ricotta savory pie.

  • 1 puff pastry (Vallé Legumitù, Fresh Base for Savory Pies)
  • 24.6 oz spinach, frozen
  • 8.8 oz ricotta
  • 1 egg
  • to taste fine salt
  • to taste extra virgin olive oil (to grease the container)

I prepared this pie at my daughter’s house with her air fryer, which is much less spacious than mine, but I found it to be very efficient. It’s small but functional.

  • 1 Air Fryer
  • 1 Container for air fryer

Steps

  • Savory pie with a legume base cooked in an air fryer.

  • Crack an egg into a bowl.

  • Add the ricotta, you can also choose goat or sheep ricotta.

  • Combine the spinach previously cooked in a pan with a little water and adjust the salt if necessary.

  • Make holes in the container with a point.

  • Finally, grease with a little extra virgin olive oil.

  • Place the pastry base in the container and prick with a fork.

  • Add the spinach and ricotta and fold the edges.

  • Finish by adding a drizzle of oil on the edges and cook in the air fryer for about 18 minutes at 356°F, being careful to check the cooking and, if it gets too brown on top, lower the temperature to 320°F-338°F.

  • As you can see, the savory pie cooked very well on the bottom too.
