  • 1 brown onion (from Montoro or a delicate onion)
  • 1 cup cherry tomatoes
  • 1 cup rice

  • In a pot pour a drizzle of oil and sauté a finely chopped onion, if you want to make this step lighter, replace the oil with a few tablespoons of water.

  • Remove them from the pot and hollow them out; the pulp will not be fully cooked, and you will add it back to the onion and tomatoes.

  • Meanwhile, cook the rice in a pot, drain it al dente, and pour it into the pot along with the zucchini pulp and feta cut into cubes, let everything blend for about five minutes, the feta will melt and make the filling soft and delicious.
