Coming home from a day of sun and sea, the desire to cook is zero, at least for me. I propose a simple summer salad that takes 10 minutes to prepare, it’s healthy, tasty. Let me know if you like it in the comments.

Ingredients
- 8.8 oz cooked black beans
- 0.88 oz baby spinach (baby spinach)
- 10.6 oz cherry tomatoes (cut into large pieces)
- Half cucumber (cut in half lengthwise)
- Half mango (peeled and chopped)
- Half red onion (optional, you can also use Tropea onion)
- 4 radishes (sliced)
- 1 avocado (small, peeled and sliced)
- 1.8 oz feta
- extra virgin olive oil (to taste)
Steps
Place the black beans and spinach on a large plate. Add the tomatoes, cucumber, mango, onion, and radishes and gently mix with your hands.
Garnish the salad with the thinly sliced avocado and feta.
Dress with a drizzle of oil, if you like you can also use balsamic vinegar.
