Toast with Salmon, Avocado, Egg, and Walnuts

With the beautiful season, I usually prepare a nice toast with salmon, avocado, egg, and walnuts. You might say, it’s a recipe you’ve seen before, but beware because my egg isn’t poached.

Preparation Steps for the Toast:

The particularity of my recipe is the cooking of the egg.
I proceed exactly as if I were making a fried egg, so I grease a pan, heat it very well, crack the egg and as soon as the white starts to set with a spatula (you’ll find the link in the tools section, look for one without BPA and that can withstand high temperatures above 450°F), flip it, and voilà a splendid poached-like fried egg :-O

Before cooking the egg, I advise you to prepare the avocado cream. You’ll just need to peel the avocado, remove the pit, and gather the pulp in a bowl. Mash the pulp with a fork, adding lemon juice, a pinch of salt, pepper, and finally, a drizzle of oil.

To prepare the toast, use a toaster for convenience or a pan or a grill.

When the bread is toasted, add the avocado cream, salmon, the poached-like fried egg, if desired, some walnuts chopped into small pieces, and a drizzle of oil to finish.

Variant:

Toast with hummus, smoked salmon, hard-boiled egg, and pumpkin seeds.

You can make the recipe vegan by replacing the egg with smoked tofu slices seared in a pan.

    No, the toast is best fresh: the avocado cream tends to oxidize and the bread loses its crunchiness. Eat it immediately, while still warm.

    Add lemon or lime juice, as citric acid slows down the oxidation process.
